Fat free pineapple cake
I got this recipe from my Mum and it’s great! I couldn’t believe it would work but I gave it a try and took it to my in-laws last week when we were invited over for dinner. Everyone liked it and it’s great for people on a diet who still want a few sweet treats. Prepare to be shocked – no butter – no eggs – just a really tasty cake!
Ingredients:
- 2 cups of self raising flour
- 1 cup of caster sugar
- 450g crushed pineapple in juice (or chunks that you’ve crushed in a blender)
- Optional – 1 teaspoon of vanilla extract and/or the zest of 1 lemon
Method:
- Mix everything together to a smooth blend
- Pour the mixture into a loaf tin or large, greased cake tin
- Bake it in the oven for 40 minutes at 180 degrees C
I’ve also made this cake using frozen berries and milk instead of pineapple and juice. Both versions are absolutely delicious and diet friendly. Serve with low fat creme fraiche or a cup of tea!
