Low fat plum tart
I’ve just finished making one of these and I’m really pleased with it! My husband’s diet is forcing me to get creative – especially now when we’re both fed up of avoiding sweet treats! This tart does have extra sugar but it is very low in fat so it should be diet friendly. We may have to run around a bit afterwards though!
Ingredients:
- About 500g of ripe plums halved and with the stones removed
- About 5 tablespoons of caster sugar or light brown sugar
- 1-2 shots of limoncello or the juice of half a lemon
- 1 teaspoon of ground cinnamon
- 5-6 sheets of filo pastry
- 1 teaspoon of unsalted butter, melted
Method:
- Pour the sugar into a frying pan and distribute evenly. Add the plums face down and put the pan on a medium heat.
- Add the limoncello or lemon juice to the pan.
- With a spoon and your fingers, or with a pastry brush if you’re lucky enough to have one that isn’t falling apart, dab some butter on the first sheet of filo.
- When the pastry sheet is thinly and evenly covered with butter put it into a shallow tart tin and repeat until you have buttered and laid out all the pastry sheets.
- Sprinkle the pastry with cinnamon and put it in the oven at 180 degrees C for 10 minutes.
- The plums should now be bubbling nicely and if you press them lightly with the back of a spoon you will notice them getting softer. When they are quite soft take them off the heat. This may not happen until your pastry is done and out of the oven.
- Use a slice or pallet knife to pick up the plums and assemble them face up in your pastry case. Pour over the remaining juices from the pan, which should be quite thick and sticky like jam.
- Return your tart to the oven and bake for another 5 minutes.
Serve with low fat vanilla ice-cream or creme fraiche. Then sit back as your family gasp at your ingeniousness!
