Hi Christine, thanks for your interest! I didn’t know the answer to this so I checked with Delia Smith’s website. Apparently sponges can be frozen in sealed polythene bags or rigid airtight containers. They should last for up to six months and can be defrosted in their containers over a period of two to three hours. It’s important not to add any filling or topping before you freeze them and they should go in the freezer as soon as they’ve cooled. Hope that helps!
