Shrikand
This dessert is not one of my own inventions. I saw it on tv in a show called Indian Food Made Easy and I was immediately in love! It’s low fat, rich, sweet and creamy and I could eat it by the kilo! I so wish I’d come up with this recipe…
Ingredients
Plain yogurt (2-3 tablespoons per serving)
Icing sugar
Milk (a couple of teaspoons is enough)
Saffron (a pinch)
Almonds and pistachios to garnish
Method
Line a sieve with kitchen paper or muslin and suspend it over a bowl. Pour in the yogurt to strain and leave it in the fridge for at least 6 hours.
When the yogurt is thick and has lost most of its liquid spoon it into a clean bowl (or the same bowl with the liquid drained) and stir in icing sugar. This must be done according to taste but I normally use a couple of dessert spoons for 500g of yogurt.
In a cup or small bowl heat up the milk for 10-20 seconds in your microwave. Stir in the saffron so that it releases it’s colour and then add to the yogurt mixture.
Garnish with chopped almonds and pistachios and serve with rapture!
PS. I made this for a dinner party recently but accidentally didn’t make enough to give everyone a decent portion. After spooning a small amount into wine glasses I quickly chopped a few apples into small pieces and cooked them lightly in butter and honey. When the apples cooled I poured the mix over the yogurt and put the chopped nuts on top. Everyone enjoyed it and no one realised what went wrong!
This dessert would work well as an addition to cake or with other fruit toppings.
