Extra special cheese on toast
I would be embarrassed to call this a recipe. It’s just a celebration of cheese on toast which can be a little bit dull if you don’t have the right extras or accoutrements. For something more extravagant Jamie Oliver has a yummy welsh rarebit recipe using egg yolks and sour cream. My ideas are a bit lazier than that and rely on you having a good array of condiments and sauces ready to go.
Cheese on toast with chilli
Ingredients:
- Two slices of whatever bread you like
- Some grated or crumbled cheddar, Cheshire, wensleydale or goats’ cheese
- Sweet chilli sauce or hot sauce
Cheese on toast with mustard and onions
Ingredients as before except:
- Substitute mustard for the chilli sauce
- Caramelised onion marmalade
- Ketchup
Method:
- Toast your bread on one side and flip over. Allow it to crisp slightly on the second side before removing from the grill.
- Add your selected toppings and put it back under the grill. Serve when the cheese is a melted and brown as you like.
