Onion and goat’s cheese tart

This week I thought I’d have a couple of vegetarian evenings. My husband wasn’t too thrilled about it but I was tired of eating meat all the time. As an ex-vegetarian I sometimes find I miss vegetarian food as much as I once missed tuna or beef and onion pies! The recipe calls for browned onions which have a lovely caramelised flavour. The dark colour and sweet taste remind me of beef and onion pies or french onion soup made with beef stock so I hope it will appeal to meat fans and vegetarians alike.

Ingredients:

  • 250g shortcrust pastry (I used ready made pastry and just rolled it out to fit my tart tin)
  • 2 large white onions, thinly sliced into half moons
  • 1 red pepper thinly sliced
  • Garlic salt and pepper
  • 1 teaspoon fresh or dried thyme
  • A dash of balsamic vinegar
  • 1 teaspoon of sugar
  • 1 egg
  • About 125g of soft creamy goat’s cheese
  • Some olive oil

Method:

  1. Heat the olive oil in a frying pan and add the onions and thyme.
  2. Sprinkle with pepper and garlic salt and let them cook on a low heat with a lid or cover on top. Check them periodically to make sure they don’t burn and stir in a few splashes of water if they look too dry. 
  3. When the onions are a mid-brown shade stir in the sugar and balsamic vinegar and cook for another five minutes or so. Remove from the pan.
  4. Now cook the strips of pepper in the same frying pan. These don’t need such gentle cooking and you should take them out when they are soft and slightly caramelised. Add the pepper strips to the onions.
  5. Roll your pastry out to fit your tart tin and prick the base with a fork before drizzling over some beaten egg.
  6. Bake for 10 minutes at 120 degrees C.
  7. After 10 minutes remove the tart crust from the oven and heap over the onion and pepper mix. Cook for another 5 minutes.
  8. Finally, put the goat’s cheese on top in generous slices or blobs and cook for a final 5 minutes to soften the cheese.

I served this with fine beans in a chilli and basil butter but you could have green salad, potato wedges, quinoa salad, roast vegetables, crusty bread, ketchup…almost anything!
